Majorca is well known for its almond trees, especially during late winter, around February / March, when they are seen covered in white or pink flowers. Majorcan people use their fruit to prepare cosmetic creams, drinks, meals and desserts.

Originally 'invented' in the Valencia area of mainland Spain, this dish is nevertheless much in evidence in Majorca and can be found on most restaurant menus. 'Paella' refers to the large flat pan that the dish is cooked in (pronounced pie-ay-a) it can contain anything along with the rice, spices etc. and to be absolutely authentic it must be cooked over a wood fire. It is not surprising given the number of almond trees on Majorca that almonds would feature in a cake. Originating from Valldemossa, the recipe gradually made an appearance throughout the island. A slice of this cake makes the ideal end to a meal especially if served with a good ice cream (almond flavour of course!). There are quite a few recipes, but the following will give an authentic tasting cake – and it is easier than you think.
